Dandelion Gummy Bears (Honey Sweetened)

You’ll need a silicone gummy mold (any shape works).

Ingredients
– 1 cup dandelion tea (made from 1/2 cup petals + 1 heaping cup boiling water, steeped 15 minutes)
– 1/4 honey
– 3 Tbsp Agar – a plant based option or gelatine

Instructions:

  • Make your tea
  • Use yellow dandelion petals only (skip the green parts, they’re bitter).
  • Pour boiling water over petals and steep 1 hour. Strain.
  • Sweeten
  • Whisk in honey while the tea is still warm.
  • Add agar or gelatin
    – Sprinkle in one tablespoon at a time, whisking between each.
    – Keep whisking 1–2 minutes until fully dissolved.
    – If needed, warm gently on low heat but don’t boil.
  • Pour + set
    – Pour into molds and let set about 2 -4 hours ( I put them in the fridge)
    – Pop them out once firm.

Storage
Keep in the fridge in a sealed container. Best within 1–2 weeks.
